Job Overview:
We are seeking a skilled and passionate Chef de Partie to join our Turkish restaurant team. The ideal candidate will have strong knowledge of traditional Turkish cuisine, including meze preparation, charcoal grilling, and authentic hot and cold dishes. The Chef de Partie will be responsible for managing a specific section of the kitchen, maintaining high culinary standards, and ensuring consistency in flavor, presentation, and quality.

Daily Duties:
Prepare and cook menu items within your assigned section (e.g., grill, hot kitchen, cold kitchen, meze).
Ensure authentic preparation of Turkish dishes, including marinades, kebabs, stews, pide, lahmacun, and traditional appetizers.
Oversee mise en place and ensure all ingredients are prepared and stored properly.
Maintain cleanliness and organization of your workstation in accordance with health and safety regulations
Assist in training and supervising commis chefs and kitchen assistants.
Follow food hygiene, HACCP, and safety procedures at all times.

Required Experience:
Minimum 2–3 years of experience as a Chef de Partie or similar role within a Turkish or Mediterranean restaurant.

Required Skills & Competencies:
Strong knowledge of Turkish ingredients, spices, and traditional cooking techniques.
Experience managing and guiding a culinary team in a fast-paced kitchen environment.
Strong knife skills and food preparation techniques, including: charcoal grilling (mangal) of lamb, chicken, and offal, proper skewering techniques for Sis, Adana, Urfa, and Beyti, doner preparation (marination, stacking, slicing), butchery, hand-mincing meat for kebabs (zirh technique preferred), and correct fat-to-meat ratios for Adana/Urfa kebabs
Good understanding of portion control and kitchen cost management.
Demonstrated experience adhering to food safety regulations and maintaining HACCP compliance.
Team player with strong communication skills.
Ability to work flexible hours, including evenings, weekends, and holidays.
High attention to detail and commitment to quality.
Ability to work efficiently in a fast-paced environment.

Wage: €36,605

Hours: 39 hour week
