Wing Kheong Wong t/a Castle View Chinese Restaurant in Macroom is looking for a full-time Sous Chef to join our team. Duties to include: prepare and cook a wide variety of authentic Chinese dishes according to established recipes and standards of quality and presentation; assist in the design and planning of seasonal and specialty menus; assist in supervising and training kitchen staff in food preparation and cooking techniques; monitor and manage inventory and stock levels; monitor food and waste control; implement cost control measures; ensure the consistency of portion sizes and presentation; maintain cleanliness and maintenance of kitchen equipment and work areas; maintain accurate records of food preparation procedures and safety checks; support the Head Chef in all aspects of kitchen operations; adhere to HACCP regulations and all food hygiene, health, and safety standards at all times. Candidates must have a minimum of 5 years of experience in a similar role; be able to work in a fast-paced environment; possess expertise in preparing traditional and modern Chinese cuisine; demonstrate strong organisational and teamworking skills; have high standards of food hygiene, health, and safety.
